The quesadilla Recipe is a beloved Mexican dish with origins dating back to the 16th century, during the Spanish colonization of Mexico. The name comes from the Spanish word “queso” (cheese), but indigenous Mexicans had been making tortillas filled with squash and beans long before cheese was introduced. Over time, quesadillas evolved, with different regions of Mexico incorporating their own ingredients such as mushrooms, huitlacoche (corn fungus), and various meats.

✅ 1 ¼ cups warm water
✅ ½ tsp salt
✅ 1 cup Oaxaca cheese (or mozzarella as a substitute)
✅ 1 tbsp vegetable oil or lard
✅ Optional fillings: cooked chorizo, mushrooms, or huitlacoche

Steps to Make Authentic Quesadillas

Step 1: Make the Tortilla Dough (Masa)

  1. In a mixing bowl, combine masa harina and salt.
  2. Gradually add warm water while kneading until a soft, pliable dough forms.
  3. Divide the dough into small balls (about the size of a golf ball).

Step 2: Shape the Tortillas

  1. Place a dough ball between two sheets of plastic (or parchment paper).
  2. Press it using a tortilla press or roll it out into a thin, round shape (about 6 inches in diameter).

Step 3: Cook the Tortillas

  1. Heat a dry comal (flat griddle) or skillet over medium-high heat.
  2. Cook each tortilla for about 30 seconds per side until lightly browned and pliable.

Step 4: Assemble the Quesadillas

  1. While the tortilla is still warm, add a handful of shredded Oaxaca cheese to one half.
  2. Fold the tortilla in half to enclose the cheese.
  3. If using extra fillings (chorizo, mushrooms, etc.), add them before folding.

Step 5: Cook the Quesadillas

  1. Heat 1 tbsp oil or lard in a skillet over medium heat.
  2. Cook the folded quesadilla for about 2 minutes per side until crispy and the cheese melts.

Step 6: Serve and Enjoy!

  1. Serve hot with salsa, guacamole, or a side of fresh Mexican crema.
  2. Enjoy the authentic taste of Mexico! 🇲🇽
