1. Chicken Pakora
Ingredients:
- 500g boneless chicken (cut into small pieces)
- 1 cup gram flour (besan)
- 2 tbsp rice flour
- 1 tbsp ginger-garlic paste
- 1 tsp red chili powder
- 1 tsp cumin powder
- 1 tsp garam masala
- Salt to taste
- Water (as needed)
- Oil (for frying)
Method:
- Mix gram flour, rice flour, and all spices in a bowl.
- Add ginger-garlic paste and enough water to make a thick batter.
- Coat chicken pieces in the batter.
- Heat oil in a pan and deep-fry the chicken until golden brown.
- Serve hot with chutney.
2. Dates and Milk Shake
Ingredients:
- 10 dates (pitted)
- 2 cups milk
- 1 tbsp honey
- ½ tsp cardamom powder
- Ice cubes (optional)
Method:
- Soak dates in warm milk for 15 minutes.
- Blend the soaked dates, milk, honey, and cardamom until smooth.
- Add ice cubes and blend again.
- Serve chilled.
3. Chana Chaat (Chickpea Salad)
Ingredients:
- 2 cups boiled chickpeas
- 1 chopped onion
- 1 chopped tomato
- 1 chopped cucumber
- 1 green chili (chopped)
- ½ tsp chaat masala
- ½ tsp cumin powder
- Salt to taste
- 1 tbsp lemon juice
- Fresh coriander for garnish
Method:
- Mix all ingredients in a bowl.
- Toss well to combine flavors.
- Garnish with fresh coriander.
- Serve chilled.
4. Crispy Aloo Samosa
Ingredients:
- 2 cups all-purpose flour
- 3 tbsp oil
- 1/2 tsp salt
- Water (as needed)
- 3 boiled potatoes (mashed)
- 1 tsp cumin seeds
- 1 tsp red chili powder
- 1 tsp garam masala
- Salt to taste
- Oil (for frying)
Method:
- Mix flour, oil, and salt, then knead with water to make a firm dough.
- In a pan, heat oil, add cumin seeds, mashed potatoes, and spices.
- Roll out the dough, cut into halves, and shape into cones.
- Fill with potato mixture, seal the edges, and deep-fry until golden brown.
- Serve with chutney.
5. Chicken Cheese Rolls
Ingredients:
- 2 cups shredded chicken
- ½ cup grated cheese
- 1 tsp black pepper
- ½ tsp salt
- 1 tsp soy sauce
- Spring roll sheets
- Oil (for frying)
Method:
- Mix chicken, cheese, pepper, salt, and soy sauce in a bowl.
- Place the mixture in a spring roll sheet and roll tightly.
- Seal edges with water and deep-fry until crispy.
- Serve hot with ketchup.
6. Dahi Vada (Lentil Dumplings in Yogurt)
Ingredients:
- 1 cup urad dal (soaked overnight)
- 2 cups yogurt
- 1 tsp cumin powder
- 1 tsp chaat masala
- 1 tbsp tamarind chutney
- Salt to taste
Method:
- Blend soaked urad dal into a smooth paste.
- Shape small dumplings and deep-fry until golden.
- Soak in warm water for 10 minutes, then squeeze out excess water.
- Place in yogurt, sprinkle spices, and drizzle tamarind chutney.
- Serve chilled.
7. Shami Kebab
Ingredients:
- 500g minced meat (beef or chicken)
- 1 cup chana dal (split chickpeas, soaked)
- 1 onion (chopped)
- 1 tsp ginger-garlic paste
- 1 tsp cumin powder
- 1 tsp garam masala
- Salt to taste
- Oil (for frying)
Method:
- Boil minced meat with chana dal, onion, and spices until soft.
- Blend into a thick paste.
- Shape into round patties and shallow-fry until crispy.
- Serve with green chutney.
8. Fruit Chaat
Ingredients:
- 1 apple (chopped)
- 1 banana (sliced)
- 1 orange (peeled and segmented)
- ½ cup pomegranate seeds
- ½ tsp chaat masala
- 1 tbsp lemon juice
Method:
- Mix all fruits in a bowl.
- Sprinkle chaat masala and lemon juice.
- Toss well and serve fresh.
9. Keema Paratha
Ingredients:
- 2 cups wheat flour
- 1 cup minced meat (cooked with spices)
- ½ tsp salt
- Water (for kneading)
- Oil or butter (for cooking)
Method:
- Knead flour with water and salt to make a soft dough.
- Roll out a small portion, fill with minced meat, and seal.
- Roll again into a paratha and cook on a hot pan with oil.
- Serve hot with yogurt or chutney.
10. Mango Lassi
Ingredients:
- 1 ripe mango (chopped)
- 1 cup yogurt
- ½ cup milk
- 1 tbsp sugar
- Ice cubes (optional)
Method:
- Blend mango, yogurt, milk, and sugar until smooth.
- Add ice cubes and blend again.
- Serve chilled.
